PEMBUATAN JELLY DRINK Averrhoa blimbi L. (KAJIAN PROPORSI BELIMBING WULUH : AIR DAN KONSENTRASI KARAGENAN) [IN PRESS JULI 2014]
Abstract
Belimbing Wuluh (Averrhoa blimbi L.) mengandung vitamin C sebesar 25 mg/100 g buah segar, dengan kadar air tinggi ± 93% membuat buah ini mudah rusak dan daya simpannya singkat (4-5 hari), sehingga diperlukan pengolahan agar belimbing wuluh memiliki umur simpan lebih lama, dengan mengolah buah menjadi jelly drink. Tujuan penelitian adalah mengetahui pengaruh proporsi belimbing wuluh : air dan konsentrasi karagenan terhadap karakteristik jelly drink serta menentukan jelly drink perlakuan terbaik.
Metode yang digunakan adalah Rancangan Acak Kelompok yang terdiri dari proporsi belimbing wuluh:air yaitu 1:1, 1:3 dan konsentrasi karagenan 0.80%, 1.00%, 1.20%. Data hasil pengamatan dianalisis dengan ANOVA dilanjutkan uji lanjut BNT atau DMRT. Hasil Jelly drink perlakuan terbaik rerata pH 2.63, total asam 1.23%, vitamin C 9.62 mg/100 g, viskositas 0.82 cps, sineresis 2.26 mg/menit.
